Usually, trying to find a recipe that is both good for you AND easy is not that simple to do. Most healthy ingredients are expensive, and don’t always have the easiest prep. Well, today that is not the case! This skillet comes together with better-for-you ground turkey, brown rice, and it is chock full of veggies!

Skinny Baked Fajitas
When it comes to eating better, I am always in search of spicy or Mexican dishes! These are by far my favorite meals to eat, and when I come across something that is not only healthy, but super easy, it’s a total win!
Meal Planning
Meal prepping is something I try to do weekly, but it is also something I struggle with. My struggle today? I’m trying to make a list of recipes and a shopping list while I’m hungry! This is NOT a good mix! Every recipe I think of sounds amazing, and looking at what I have, I am going to end up with WAY more food than I need to last me a week.
With that being said, I have definitely decided to try making baked chicken fajitas tomorrow. I can use this in so many different ways through the week, and it’s such an easy recipe!
Along with the fajitas, I believe I will be making some Mexican rice and maybe some salsa. I guess this week’s recipes will all have a Mexican theme to them! (Have you noticed I have a SERIOUS Mexican/spicy food addiction yet?!)

Tuscan Chicken with Green Beans & Red Potatoes
By this point, you’re probably wondering if I ever make anything that isn’t chicken. The answer is yes, but not quite often. Red meat doesn’t sit well with me, so I mainly stick to chicken, with turkey and fish thrown in sometimes.
With that being said, you HAVE to try this recipe! One of the easiest I have posted so far! Only took about 10 minutes to throw together, and there is minimal clean up!

Pan Fried Chicken
After a busy week and a relaxing weekend, Dan and I were trying to come up with ideas for a good Sunday dinner. He suggested fried chicken, and it was perfect because we already had all the ingredients in the house. I was nervous, because it’s been a long time since I’ve fried chicken, and I wasn’t really following a recipe, but wow! I impressed myself on this one!
And yes, I know this post is FAR from healthy, but like I’ve said before, everything in moderation!
