Freezer burritos are one of my new favorite things! It’s a great way to have quick meals on hand, and they are so easy to throw together! In just a half hour, I had 8 burritos put together and ready to be frozen. Plus, they are healthy, and totally customizable!
I choose to leave my burritos vegetarian, but you could easily add in chicken, steak, or ground beef to these!
First things first, I got all my ingredients prepped and ready to go.
I swear by these refried beans! The black beans are a delicious and healthy alternative to regular pinto beans, and by mixing them together I get great flavor from both of them!
I diced up a jalapeno (including the seeds for extra heat!) and half an onion, sauteing them until they were tender. Meanwhile, I also cooked two cups of brown rice.
Once the rice and vegetables were cooked, I mixed them together, along with 1 chopped roma tomato.
I grabbed a pack of whole wheat tortillas and the cling wrap, and began assembling my burritos! I spooned the burritos onto the tortilla first, then topped with the rice.
I will be the first to admit, I am TERRIBLE at rolling burritos. But it doesn’t matter how good they look, as long as they taste good! Once I had all the ingredients inside the tortilla, I wrapped the burrito and then wrapped tightly with cling wrap.
Like I said, they aren’t pretty! But seriously, they are so good! Great option for a vegetarian meal, and super quick! To heat up the burritos once frozen, I simply put in the microwave for 2 minutes, flip, and heat again for another 2 minutes! Simple, clean eating made easy with just a half hour of prep!
Clean Eating Freezer Burritos
Servings: 8
- 8 whole wheat tortillas
- 2 cans organic refried beans, 1 black, 1 pinto
- 2 cups cooked brown rice
- 1 jalapeno, diced
- 1/2 onion, diced
- 1 roma tomato, diced
- Mix the two cans of beans together in a bowl, set aside.
- Saute jalapeno and onion until crisp tender.
- Mix jalapeno, onion, tomato, and rice in a bowl, set aside.
- Top one tortilla with beans, evenly down the center, then top with rice.
- Fold the tortilla into a burrito, then wrap with cling wrap.
- Repeat with rest or tortillas.
- Freeze burritos in a freezer bag.
To heat: Unwrap burrito from cling wrap, heat in microwave for 2 minutes on one side. Flip burrito, heat for anther 2 minutes.
