When a cheesy side dish is what you’re craving, give this recipe a try! It’ll satisfy your craving, and is packed with veggies, so you won’t feel bad about indulging!
Cheesy Zucchini Rice
–1 cup instant brown rice
-1 (15 oz) can low sodium chicken broth
-1 small onion, diced
-1 1/2 cup shredded zucchini (I used my cheese grater!)
-1 cup shredded cheddar cheese
-1 Tablespoon butter or margarine, divided
-2 Tablespoons minced garlic
-1 Tablespoon everything seasoning
-Salt and pepper to taste
1. In large skillet, saute 1/2 Tablespoon butter, onion, and garlic. Cook for about 3-5 minutes, or until onion is opaque.
2. Add rice in with onion, toast for another 2 minutes.
3. Add chicken broth and everything seasoning into rice. Turn heat to medium-low, cover, and cook for 15-20 minutes.
4. Once broth has been absorbed, mix in zucchini, cheese, remaining butter, salt, and pepper. Stir until cheese is fully melted.
