Cucumber Cilantro Salad

A fresh and easy way to enjoy all those summer vegetables!

Ingredients

  • 1 greenhouse cucumber
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 Roma tomatoes
  • 1 small red onion
  • 1/2 bunch cilantro
  • 2 Tablespoons olive oil
  • Juice from 1/2 lemon

Directions

  1. Chop all vegetables into very small pieces, roughly all the same size.
  2. Finely chop cilantro, and add into vegetables.
  3. Drizzle with olive oil and lemon juice. Stir well to combine.
  4. Refrigerate for at least 30 minutes before serving.
