A fresh and easy way to enjoy all those summer vegetables!
- 1 greenhouse cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 2 Roma tomatoes
- 1 small red onion
- 1/2 bunch cilantro
- 2 Tablespoons olive oil
- Juice from 1/2 lemon
- Chop all vegetables into very small pieces, roughly all the same size.
- Finely chop cilantro, and add into vegetables.
- Drizzle with olive oil and lemon juice. Stir well to combine.
- Refrigerate for at least 30 minutes before serving.
