A simple side dish that pairs perfectly with whatever you have cooking on the grill!
- 4 zucchini squash, cut into slices
- 1 teaspoon olive oil
- 1 lemon
- 1/4 cup crumbled feta
- 1/4 cup fresh parsley
- Salt and pepper
- Line baking sheet with tin foil. Place zucchini on pan, squeeze lemon over top and drizzle with olive oil. Season to taste with salt and pepper.
- Broil for 4 minutes, stir and top with Feta. Broil for another 4 minutes. Top with fresh parsley.
