Dinner tonight was light, fresh, and so delicious!
I quartered and sliced 2 zucchini and threw in a gallon xiploc bag. I then drizzled with olive oil and seasoned with salt, pepper, onion powder, garlic powder, and panko bread crumbs. I broiled for about 12 minutes, flipping twice.
We also had my cilantro scallion rice topped with Aidell’s mango jalapeno chicken sausage and Aldi’s mango pico de gallo.
Everything was so fresh tasting, it definitely hit the spot!
