Taco Macaroni and Cheese

A quick and simple dinner that is sure to please the whole family!

Ingredients

  • 1 lb lean ground beef
  • 1 packet low sodium taco seasoning
  • 1 1/2 cups fresh salsa
  • 8 oz pasta (I used Banza, but you can use whatever variety you choose)
  • 1/2 cup milk
  • 1 1/2 cups shredded Mexican cheese
  • Cilantro, if desired

Directions

  1. Boil noodles according to package.
  2. Brown ground beef in large skillet, crumbling, until no longer pink.
  3. Stir taco seasoning and salsa into ground beef. Turn heat to low, cover, and simmer for 5 minutes.
  4. Pour milk into beef, stir to combine. Add cheese in and stir slowly, using small circles to melt the cheese without it becoming stringy.
  5. Once noodles are cooked, add into cheesy taco meat. Stir well to combine, and top with cilantro, if desired.
