I have a board on my Pinterest that is ideas for the next meals I want to make. Yesterday I was struggling with what to cook, so I handed my phone to Dan and asked him to pick a meal. His chose stuffed peppers, and I adapted this recipe into my own!

Chicken burrito bowls

I’ve never made burrito bowls before, and they have always sounded amazing, so I decided now was as good as any time! I used this recipe I found as my inspiration (http://www.sixsistersstuff.com/2014/03/chicken-burrito-bowls.html) and made a few tweaks. I also cut the recipe down, as I only wanted to make two servings.

Meal Planning!

Tomorrow is my day off, so I am spendingΒ  tonight going through recipes and figuring out what I want to make for the rest of the week.

Recently, I’ve begun to notice adverse effects to me eating processed foods. Because of this, I’ve been trying to eat clean. With that being said, I don’t stick to clean eating 100% of the time, but I try to prep my meals for work during the week so I am not tempted to pick up fast food. When it comes to the weekends, I try to make healthy meals for myself and Dan, but being as addicted to food as I am, I tend to let myself cave and cook something unhealthy, or even go out to eat.

While going through recipes, a couple things have caught my eye to add to my “must make” list for tomorrow.

  • Veggie snack bars
  • Chicken burrito bowls
  • Skinny spinach and egg white salad

On top of these recipes, I will be prepping a few different meals to last me through the week. Check back tomorrow to see these recipes, along with pictures, and to see my feelings on how they turned out!
