With my decision to begin living a more heart-healthy lifestyle, broccoli was a great choice for a side dish to go with dinner last night. I was never a big fan of broccoli up until the last few months, and it’s still not my favorite, but I’ve definitely warmed up to it!
All you have to do for this broccoli is mix 2 Tablespoons extra virgin olive oil in a Ziploc bag with 1 Tablespoon crushed red pepper, 1 teaspoon garlic powder, 1/4 teaspoon black pepper, and 1/4 teaspoon salt. (Omit the salt if you like!)
Once your spices are all mixed up with the oil, add in 1 bag of organic broccoli, and shake to coat.
Simply put the broccoli on a pan lined with tin foil and pop in the oven at 375 for 20-30 minutes, depending on how done you’d like it. That’s it! Very little clean up involved, super simple prep, and no need to worry about keeping an eye on it while cooking something else!
Roasted Red Pepper Broccoli
Servings: 4
- 1 bag organic broccoli
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon crushed red pepper
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (optional)
- 1 gallon size Ziploc bag
- Mix Extra Virgin Olive Oil with seasonings in the Ziploc bag.
- Add in broccoli, shake to coat.
- Place on pan lined with tin foil, bake at 375 for 20-30 minutes.
