Sunday morning meal prep had me busy this morning! In an hour and a half, I prepped:
-Venison taco meat for casserole
-Queso chicken soup in crockpot
-Cilantro rice
-Thai coconut chicken with rice from above and green beans
-Pork chops
-Chicken sausage pasta
-Breakfast boxes with cottage cheese, pineapple, and bacon
-Ginger soy chile salmon
-Formula for the baby
I even managed to put Noah down for a nap partway through, which is usually a chore on its own.
I am learning how to balance working, being a mom, and still managing to not feed us fast food every day. This means it is mandatory that I dedicate time on the weekend to meal prep. And honestly, long gone are the days of crazy menus with in depth recipes, at least for now.
Now, I need meals I can put together quickly, that are healthy, and require minimal work throughout the week.
This is why I am working on the concept of cooking once for the week. This doesn’t mean I actually don’t cook at all on a weeknight, but that I can throw something in the oven as soon as I get home, or throw something in the crockpot in the morning.
